At least once every other week is Taco Night. I usually make a taco salad for C and I, then tacos in corn tortillas for the kids. When I do the taco salad I make this dressing:
1/4 c. chopped fresh cilantro
2 fresh squeezed limes
1/4 c. olive oil
s & p
Mix all and let rest while cooking the taco meat
This is super easy and healthy.
1 1/2 lbs ground lean tureky
1 can tomato sauce
1 can black beans
1/2 chopped onion
1/2 packet (even less because it's spicy) Trader Joe's taco mix
1. Saute onions in olive oil for about 1 min. Add in the turkey and brown. Sprinkle with the taco spice then cook for about 5 minutes. I then add in black beans and tomato sauce and reduce heat to medium, simmering for about 5 minutes until thickened.
2. I heat up the tortillas on the stove just like my mexican side of the family does! Keep them warm
3. If making the salad, I chop up fresh romaine and place in a big salad bowl. I top it with 1/2 of the taco meat, break a bunch of tortilla chips on top, chopped up tomatoes and the dressing. Mix. Serve with cheddar cheese.
4. If making tacos, then assemble with tortilla, meat and cheese on top, lettuce, tomatoes, etc etc.
I usually serve on the side Cowboy Caviar (a recipe that needs a post all it's own) or just corn mixed with salsa and limes.
Just tried this and it came out beautifully. I never loved spaghetti squash until finding this recipe…I’m now hooked and will be adding this into my meal plan a lot more. Thank you so much!
