Kale, Bean and Sausage soup




Kale, Bean and Sausage Soup - made this up with a little help from another recipe. Smells so yum. Serve with some fresh, crusty sourdough bread.
10 oz chopped kale
1 14oz can diced tomatoes
1 small diced onion
4 celery stalks, diced
4 carrots, diced
1 quart chicken stock, unsalted
2 garlic cloves, minced
1 14oz can cannelinni beans, drained and rinsed
1 lb apple chicken sausage, diced
1. In a dutch oven, heat olive oil and saute onions, garlic, carrots, onion and celery - season with pepper and a little salt, cook until soft. Add in the diced sausage and cook until browned.
2. Add in the beans, tomatoes and broth. Bring to boil while adding in the kale. The kale will wilt, simmer covered for about 20 minutes until blended, adjust seasonings as your prefer. Serve topped with parm cheese and bread on the side!
