PB granola




I'm having a love affair with peanut butter. It's so good for you and there are so many different ways to enjoy it. Via tweeter I read the Shape maganize article of 10 healthy peanut butter recipes. Of course I'll be trying them all but right away I had to try the PB granola since I had all the ingrediants AND I love granola.
2 tbsp creamy peanut butter (I use Trader Joe's Valencia PB with sea salt)
2 tbps honey
tsp cinnamon
tsp vanilla extract
1 c. oats
Mix the pb and honey, microwave for 20 seconds until melted, and mix. Add in the cinnamon and vanilla then the oats until covered completely. Pour out on parchment paper lined on a cookie sheet. Bake at 325 for 7-8 mins. Looks like a great addition to yogurt or alone! yum!
