Curry sausage, bean, kale and veggie stew
Soccer practice night so I threw together one of our favorite slow cooker stoups. So yummy and the kids eat it all up.I make this a lot during the cooler months - I add in or take out some veggies. You get the jest of the basics of the recipe. The curry ties it all together!
1 lb smoked kielbasa turkey sausage - diced
1 large can diced tomatoes
1 can red kidney beans (drained and rinsed)
2-3 peeled and diced sweet potatoes
3-4 peeled and diced carrots
3-4 diced celery stalks
diced parsnips, turnips
bunch of mushrooms diced
bunch of kale (or swiss chard, or any leafy green) rinsed and dried
2 cups chicken stock
curry, garlic salt
1. Dump in all of the veggies, beans, tomatoes and sausage. Season with 1/4 c. curry powder and 1 tbsp garlic salt - mix. Add in the kale and chicken stock (add a little water to make sure kale is covered if needed)
2. Cook on low all day. Serve with hot sauce and grated cheese on top and crusty whole wheat bread.
