I know this may sound and look gross....but truly these were very good and we will be making them again! True they are not the same as biting into a thick, sirloin burger...but it was so nice to have a burger with no little fatty balls of gross! The kids and C loved them.
Sweet Potato Veggie Burgers
makes 7-8 large patties
2 cans cannellini white beans, drained
3-4 small or two large sweet potatoes, cooked, peeled and mashed
2 Tbsp tahini
2 tsp maple or agave syrup
1-2 squeeze of fresh lemon
1/4 cup wheat flour
salt and pepper to taste
plentiful Panko crumbs
grapeseed or olive oil
Directions:
1. Place potatoes in large bowl and mash
2. Add drained beans to mixing bowl. Mash beans and potato together.
3. Mash in seasoning, flour and any additional seasoning. Your mixture
will be quite soft and moist. But you should be able to form a patty. Add more flour or a scoop of breadcrumbs - or dry rice to thicken the mixture if needed.
4. Heat 1 Tbsp oil in a pan over high heat. (make sure this is hot before you add the burger)
5. Form a patty from mixture and coat in Panko crumbs. Thick coating.
Then drop the patty in the pan. Repeat until the pan is filled. Cook
until browned on both sides. Use more panko as you form the burgers and they will stay together nicely
6. Transfer cooked patties to paper towel. Cool for a few minutes.
7. Serve with whatever toppings...we used avocados, dijon mustard and ketchup
